Easy Cauliflower Rice Recipe

Cauliflower is a vegetable that is packed full of benefits! If you’re looking to add some cauliflower into your diet, or to cut down on calories, try out this insanely easy cauliflower rice recipe. Simply substitute “normal” grain rice in any recipe with this easy low calorie substitution. Even better- you can freeze uncooked rice for up to a month, and cooked rice for 5 days!

Ingredients

  • One large head of cauliflower

  • 1 tbsp olive oil

Directions

  • Wash and dry cauliflower, then remove all greens

  • Using a box grater, grate the cauliflower using the medium-sized holes (approximately the size of rice grains)

  • Transfer grated cauliflower to a paper towel to remove any excess moisture, which prevents your “rice” from being too soggy

  • Sauté “rice” in olive oil, cooking on medium heat in a large covered skillet for about 5-8 minutes

  • Enjoy!
