Easy Healthy Cranberry Sauce
Cranberry sauce is a classic Thanksgiving dish! But so many cranberry sauce options are packed with additives, sugar and more. This recipe is SO easy, and gets that delicious cranberry flavor without a ton of sugar. And best of all, it can be refrigerated for up to two weeks, so you can enjoy those leftovers for days after!
Ingredients:
1 cup apple cider
⅓ cup pitted dates
3 cups fresh or frozen cranberries
1 teaspoon vanilla extract
Puree apple cider and dates in a blender until fairly smooth.
Transfer to a medium saucepan, along with the cranberries. Bring to a simmer over medium-high heat. Reduce heat to maintain a simmer and cook until most of the cranberries have broken down, 13 to 15 minutes.
Remove from heat and stir in vanilla.
